Fusing the flavors of his native Cuba — he grew up in Little Havana — with farm-inspired cooking, Chef Michael Beltran honed his skills working under New World Cuisine founder Norman Van Aken. Now the chef at Ariete, he works alongside restaurateur Jason Odio under the moniker Native Sons. Located on Coconut Grove, Ariete is named after the restaurant Beltran’s grandparents worked at in Cuba. Native Sons also opened neighborhood cocktail bar Baby Jane in Miami.
